Making Whoopie
Worthy journals and newspapers such as British Baker and the Times have heralded the arrival in the UK of the whoopies - a dense American-style sponge cake sandwiched together with a thick filling of whipped-up vanilla butter cream, decorated on top.
The story of the whoopie dates back to the 1920s when Amish farmers' wives made them as a lunch treat for their husbands - a delicacy so well received they'd apparently shout "whoopie" when they received one. Fast forward almost a century and whoopies started to make their mark on UK shores with their introduction by the Hummingbird Bakery.
The components are 2 tubby, slightly dry sponges, sandwiched together with whipped-up vanilla butter cream. The icing and decoration on top are optional, but if you want to create standout have a look at our purple glimmer sugar, shimmer hundreds and thousands or mixed colour sparkle strands.
